Clear pale yellow color. Poured a tall head that dropped down to a persistent, thick skiff after three minutes. Moderate flow of small bubbles from the bottom of the glass. Left large patches of lacing.
Strong bready yeast and malt with just a touch of sour. This is like a fresh slice of yeast bread with a touch of sourdough starter. Very faint horseblanket. Swirling the glass kicked up the horseblanket to a mild barnyard for a few seconds, then back to the original scents.
Strong malt, mild yeast. The flavor is really liquid bread. No sourdough came through in the flavor. Just a touch of tart. The aftertaste is a gentle decline in the original flavor, while a mild bitter shows up. This keeps an great flavor profile even when it has warmed up to body temperature.
Gentle foaming action. Got creamy for a few seconds but then went past the cream to a more coarse bubbled foam. Just a bit oily.
This is probably the strongest flavored Kölsch I have tasted. Usually I pick Kölsch when I want something light to replace a West Coast Pilsner (because most of those are horrible). This really makes the most of the ale heritage at the expense of being less of a traditional Kölsch. I really like it, but it loses marks for not being quite true to style. This could easily be a house beer.
