This mixed culture sour was crafted from malbec grapes, blueberries, and raspberries that were fermented in mead made with a base of meadowfoam honey. After being removed and pressed, the remaining pomace was then refermented with our foudre aged saison in a zinfandel whiskey barrel. The result has a deep tannic structure, with notes of mixed berry compote, rosé, and peppery french oak.

Poured from a bottle into a Dogfish Head tulip
L: Cloudy light golden pink pour with thick fizzy white head. Falls fast... good lacing. Sediment at the end of the pour and at the bottom of the glass.
S: Tart and fruity. Funk and vinegar.
T.F: Tart fruit with a bit of honey and berry. Vinous... with white wine and oak. Not picking up much of the whiskey... a bit of spice. Modest acidity. More white wine and fruit. Well carbonated... prickly. Tart fruity finish.
O: A very well done barrel-aged wild ale (or saison?). Complex... nice mix of fruit and tart. Free Will does this style very well.
