Doppelbock brewed in collaboration with our long time friends opening Brewery Novalis (Syracuse, NY). Made with Munich and caramel malts, single decocted, fermented with our house lager strain, then cold conditioned for a long long time. Pours a very pretty chestnut color with garnet shaded highlights. Aromas and flavor of pumpernickel bread which swirl with notes of raisin, date, and toffee with undertones of cherry wood.

Big fat malted milk ball head takes shape over a pretty red copper body. Head hangs out forever and leaves big sticky lines of lace. Pretty beer. Smells super-clean which tells me it was properly lagered. Has the usual malt and bread notes, nothing crazy or too sweet. There's something a little spicy in there, too. Not sure if it's from a hop addition or maybe some rye malt. Tastes really nice; the malt is reminiscent of an Irish red ale, just amped up a bit. Still carries that mild spiciness too. Bready notes. Impossibly smooth and clean mouthfeel. Medium bodied, approaching full. I'm partial to this style to begin with, but this is just a tremendous beer.
