Our house saison fermented in steel and aged in a variety of wooden barrels with mixed culture. A uniquely chosen cask was then conditioned on freshly picked mimosa flowers from a property next to the brewery in the Summer of 2023. Notes of strawberry, pink grapefruit rind, and dandelion root.
