Dry Hopped Mixed Culture Beer
A beer reminiscent of the American saisons of yesteryear. Fermented with mixed culture and later dry hopped with choice varietals designed to push the expression of brettomyoces, while still maintaining drinabliity. Dry, hoppy, and funky with a unique tropical fruit and citrus character - with a spritzy finish that leaves you craving more.

Pours a pale, cloudy yellow; dense carbonation; very dense and sudsy head, white with some creamy characteristics. Very pungent, citrusy aroma; lemon and lime tones; very delicate malt grain undertone; grassy; some of that hard-to-define wild ale funk. The taste amplifies a lot of the smell aspects; citrusy; tart and tangy; dry lemon pith; bitter offset. Medium-heavy body; sharp and acidic yet with some velvety feel; mouthpuckering.
This is a fine take on American wild ales. I am inclined to believe that the dry hopping really built the main distinctions of this beer. The beer brings an abundance of taste and aroma notes to the palate, all wrapped up in a fantastic appearance for a wild ale. A fine tasting experience.
