This beer spent the last year in hand-picked Laird's Apple Brandy barrels. Time plus these wonderful casks have created an extremely complex drink with notes of fig, apple, and raisin with a layer of warm caramel and biscuit notes, followed by molasses and vanilla undertones.

Tonight I am sampling a cellar temp 375 ml bottle poured into a snifter. Beer was ordered from the brewery. This bottle says 2025 and 12.8% ABV, looks like the 2024 vintage was 12.6%.
The beer pours a rich mahogany color with some ruby highlights. Some light passes through my glass on the edges of the pour.
The foam is khaki colored dense and about 1 cm. The foam also fairly quickly fades to a sturdy edge layer, some dense clingy lattice forms when I swirl or take a sip.
Aroma is some toffee malt with fruity mix of apple and raisin. Definitely more on the sweeter apple like a gala not tart. I also get a pretty good hit of fusol booze on the aroma. No real hop character on the nose here.
First sip reveals a surprisingly light and thin body, beer almost feels watery on my palate. Carbonation is very fine and tingly, but not sharp and prickly if that makes sense.
Flavor is some toffee and apple fruit and some sort of apple skin note and a good hit of black peppery booze. No hops found here either and there is definitely some warming down my gullet after each swallow. I like the flavor of this beer, but the texture and mouthfeel are a downer, so thin, too much fermentable sugar? Im glad to have tried this but wont buy another bottle.
