Firmly rooted in the bluegrass but taking sudsy cues from Belgium, the abbey-style dubbel that's done the Country Boy way is robust yet easily palatable and with a proud savory sweetness.

Its deep chestnut color is faintly translucent and capped with a short and creamy froth. Its nutty and caramelized scent is spicy with cinnamon and red wine. Steely caramels layer on the tongue with a sticky and dry early texture. The tethers of wine and hard candy set a sweet tone.

As the middle palate unfolds, the sweetness turns lightly spice cake-like as the sweet and spiciness is creamy and the breadiness of malt retains is moderate sugars. Cherry, apple, berry, plum and red currant link up with the sweetness and await a counterpart of spice to balance. Peppercorn, cinnamon and hints of curry balance the fruit while a tinge of rummy alcohol and a spicy hop bitterness contend with the sweetness.

Medium-full on the mouth, the beer's lush and creamy sweetness lingers long on the tongue. Though its tepid acidity and natural yeast spices assist the alcohol in drying the taste, the beer's gentle carbonation keeps the ale lying weightily on the the tongue.
