There’s a certain point in the year that Houstonians have learned to fear. That subtle change in the temperature when suddenly “pleasant and nice” becomes “damn, it’s hot”. Rotundone is an ale made for those days.

We added peaches to this version of Rotundone because what’s better in the summer than peaches? Nature’s candy, fresh & juicy peaches add perfect balance of wafer thin sweetness to the savory Saison base.

This variation of Rotundone, our old-school French Saison, is a peach punch in the nose & a savory, effervescent bubbly prickle on the tongue. As it warms, you’ll start to pick up a peppery spiciness on the nose and in the bright, bone dry finish. That’s coming from a combination of the esters off the yeast strain and two types of peppercorns. Let it breathe a bit (like you would a tannic wine) and those same aromatics will react to the atmosphere in unpredictable ways.

i like the peach a lot better than the tropikal variant of this brew, but i am still not sold overall on the base saison. its boozy and malty and rather weighty as they go, i really think these added flavors would work a lot better in a more delicate base beer, but that might be more personal preference than objective fact. there isnt a ton of peach in this one, and i smell it a bit more than i taste it, but i like it being this natural. sweet and fleshy but lost a little bit to the richer malt base, almost baked peach dessert vibes here with the grain rather than fresh fruit, but it tastes good and seems autumnal to me. there is a cool spiciness to this, a peppercorn sort of vibe in the yeast, a french saison white wine character, some light tannins here, and a lot of the wheat malt as well. some sweetness left from the peach is nice with the booze at the end, and carbonation and body are both robust in this, a more sturdy saison than many. this would be great with a brett pitch, but works pretty well as it is. i liked it better than the tropikal edition, but had far higher hopes for both beers...
