Blended Pennsylvania Sour Brown. Brewed with a plethora of specialty malts and sea urchin (uni). Conditioned with our house microflora for many moons in a stainless tank atop Carménère soaked oak chips. Complex with a zippy acidity. Notes of brown sugar, red cherry, apple cider, plum skin, and oyster shell.

A wonderful display of flavors - cherry like tartness, mild salinity, and a sweet malty finish. The tartness lingers on for a bit, but is very enjoyable.

I tried this from the growler chilled thanks to tenderbranson69 -enjoyed in a willybecker.
The color is burgundy with light tan head with translucent clarity and good retention.
The smell is fruity tart vinous and slightly prune-ish with a mild balsamic type woody quality. The feel is more acetic that expected tart with fruit and acidity is there with moderate carbonation and mild sweetness and a drying pucker inducing finish.
The taste is very good -nice wine and oak elements with some dark sugar and light sour cherry-like flavors with a mild balsamic vinegar quality in the back. The flavor of sea urchin is not apparent to me however it does have a slight astringent /tannic quality not sure how that would be related though. This is a decent oud bruin but very tart and I could not handle more than 1/2 a liter myself.
