Apricot & Sage Double IPA. Brewed with tons of malted red wheat, local wildflower honey, and a pinch of Himalayan pink salt. Conditioned atop tart, juicy apricot puree, and a touch of fragrant white sage. Dry hopped all the way there with Citra from our 2018 selections in Yakima, Washington. Notes of juicy pink grapefruit, green papaya, ripe feijoa, and watermelon rind.

A: cloudy; pale gold in color; with a fairly aggressive pour, a 1 finger white head that receded to a thick collar; nice lacing;

S: sage with apricot;

T: sage is predominant with apricot in the background; honey is noticeable in the middle; the sea salt come through toward the finish;

M: medium bodied; light carbonation; moderately dry finish;

O: I would have liked more balance between the apricot and white sage;

Fascinating and tasty beer that delivers what it promises. An apricot sage ipa with all elements exceptionally well balanced. However it’s an apricot sage ipa. After one I’m good, I like sage and the culinarily interesting take here but even with careful integration it’s still sage forward and for me that’s inherently a little limiting.

On the pour, this beer looks like many other hazy IPAs, with a light yellow color and complete opacity. And when you smell it, you don't necessarily pick up anything unusual at first, either. But then, you taste. Grapefruit and other pithy fruits fill your mouth, thickly coating like an IPA, but without much of a hop presence or any bitterness. The gold, however, is after you swallow, when you exhale through your nose. Pure sage. The herby character is unique and exceptional.

Pours hazy orange with a white head.

The nose is savory sage and citrus.

The taste is lemon-lime, apricot, orange, and sage. Interesting. Definitely herbal and lightly salty, leaning towards a margarita. The apricot puree mixes well with the hop profile.

The mouthfeel is medium, with the salt and sage providing slight drying on the backend.

Overall, good. A unique beer.
