Brewed with malted spelt, and hopped heavily with Simcoe. Fermented in a large oak foudre with our Magickal Saison yeast and conditioned atop ripe peaches and apricots, as well as the juice of the cacao fruit. Refermented in the bottle for natural carbonation.

Poured from a 500 ml bottle into a taster glass.
L - Pours a clear lemon yellow color with a slight white head.
S - Smells of tart fruits.
T - Taste matches the smell, lots of tart peaches, and some apple. I detect a little cacao on the finish , as the beer warms.
F - Very effervescent with a medium to light body.
O - Delicious fruity tart saison.

Poured from a 500 mL bottle into a Dogfish Head tulip
L: Clear light golden pour with fizzy white head. Falls fast... decent ring of lacing.
S: Tart and funky. Oak and green fruits.
T.F: Tart up front without being overly sour. Some definite funk and barrel going on. Lemon citrus, white wine, oak, and unripened summer fruit. Apricot and Granny Smith apple. Not picking up much cocoa juice (although I'm admittedly not sure what that tastes like). Crisp and refreshing. Relatively light bodied with effervescent carbonation. More funk and unripened fruit at the finish.
O: Another outstanding saison from Tired Hands... and a style they do better than just about anyone. Great beer.

This one pours a light and mostly clear orange color, with a small head, and not much lacing at all.
I'm not entirely sure what the cacao juice adds here, but this smells really great. The stone fruit plays off off the funky pineapple hop character very well. There's a bit of lemony and white-wine-esque funkiness, too.
This is a great little citrusy banger. There's loads of pineapple, stone fruit, grapefruit, orange - with just a huge fruitiness to it. There's a heavy acidity on the back end. It's got a light and pleasant funkiness to it, mostly white wine type flavors.
I didn't even know they made Shambolic variants, so this was really great to try. It's easy to forget with all their weird milkshakes and dessert beers that Tired Hands makes really good saisons.
This is light bodied, crisp, and with a big lingering acidity on the back end. It's still got a pretty good drinkability.
I hope they keep doing variants on this one. This was great to try.
