IOUNNO3 is brewed with an IMMENSE grist composed of American two row barley, flaked oats and a dizzying assortment of dark specialty malts, as well as a touch of lactose sugar. Conditioned on Madagascar vanilla beans, maple syrup, and house-roasted coffee (we chose a super rich, chocolatey and caramelly bean from Brazil to match this dense, lush beer,) we blended the beer with a portion of mature Stout that we've had aging in Buffalo Trace Bourbon barrels for about 16 months. 12.5%. You'll get notes of chocolate covered espresso beans, affogato, Irish coffee, fresh baked brownies drowned in a bourbon glaze, and getting a big ol' wet kiss from a bottle of kahlua

Poured from a 12 oz can into a Dogfish Head tulip
L: Inky black pour with a finger of mocha colored head. Nice ring of lacing.
S: Rich and sweet. Booze, espresso, vanilla, chocolate, and love.
T.F: Sweet to start. Lots of cocoa and vanilla. Maple syrup, espresso, bourbon, and fudge. A bit of char/roast for modest bitterness. Boozy and warming... smooth mouthfeel. Sticky... low carbonation. Chocolate covered coffee bean finish.
O: An outstanding sweet/dessert stout. Big flavor and absolutely delicious. A great winter sipper.

Pours a dark brown bordering on black color. Completely opaque. Thick 2-3 finger head forms on the beer then steadily dissipates leaving a ring of foam along the outside of the beer.
Aroma has notes of coffee grinds, maple syrup, cream, roasted malts, chocolate, with light hints of chocolate and caramel. Not getting and barrel aged/bourbon notes on the nose.
Taste follows the nose with a strong coffee presence up front. Notes of caramel, vanilla, maple syrup, peanuts, with light notes of oak, and hints of bourbon on the back end. Rich roasted malts provide a strong robust backbone for the beer. Light roasty bitterness on the back end.
Feel is medium bodied for a 12.5% stout. Moderate, smooth carbonation.
Overall a very nice stout. The barrel aging is extremely subtle, to the point of really not being all that present, but it does a nice dimension to the beer. A very enjoyable beer.

Looking forward to seeing how this matures, flavors of strong coffee, roast and char, hints of vanilla and bourbon with some heat. I think if this beer had a bit more substance to it, it could ascend mightily towards greatness. Decent
** Three years advanced, the carbonation and coffee have fallen off quite a bit while vanilla has become predominant. No longer any hint of booze. The two year mark seemed to be the sweet spot for this one.

Pours a dark brown. Very mild aroma of roasted malts. The taste is strong and a nicely balanced combination of the coffee, bourbon, chocolate, vanilla and a hint of maple syrup. Medium mouthfeel though I would have preferred a thicker feel. Overall, a really good stout.
