i like eastern candle because of its simplicity, always have, but what it lacks in depth and curiosity, the dry hopped edition more than makes up for, this is the beer i have been waiting for in many ways, a softly but potently hopped wild ale, blonde, effervescent, and all day drinkable. hazy pale yellow in color with one of those all time heads that rises way above the rim of the glass without spilling over, and then stays the whole bottle, its awesome to look at. smells a bit hoppy, but citrusy and tart more than anything else, maybe some amarillo in here. the brett is subtle, but its perfectly dry in feel, and with all these bubbles its hard to top in mouthfeel, the light body is just right. as much a saison as a wild ale to me, with a grassy farm yeast to it, some wheat malt, and not a ton of funky weirdness for a brett brew. i get some soft oak, but the hops carry the finish nice and long even though this is ultra dry. memorable beer, a league better than the already finely crafted original eastern candle. this is a downright winner, i hope they bottle another batch.
