a collaboration with finback, who i have really been digging this year when i have had the chance to drink their beers. this is an interesting one, mixed culture with prickly pear, not my favorite adjunct in this sort of thing, but it makes a unique brew. underneath it all though is a very solid funky beer, trve house culture mature bretty funkiness, citrus notes like lime and grapefruit, and then a simple but fluffy feeling grain base that works great with the high carbonation and moderate acidity, it would be very good even without the prickly pear. it gives the beer a highly fragrant floral and citrus element, perfume almost, things like rose petal and aloe and lavender come to mind, lush and botanical rather than fruity, less intense but similar in the flavor, with the sourness being kind of exacerbated by it as well. a touch of sweetness in the middle, a chemical flash too that i dont love, and then dry and bubbly and fast to finish. flavorful beer, but probably not for everyone, the prickly pear is kind of strong here, and if you dont care for that flavor there is no way around it here. overall a cool beer, but i almost wish these guys got together to make a hoppy one, given how well they each have been doing those...
