an awesome new one from these guys, a mix of a mixed fermentation sour and a spontaneous beer, its subtle to drink, but also really complex, a cool showcase of the different fermentation profiles these guys have achieved all put together neatly in a nice little drinker here. i like their truly wild character, and its on display here, not too much acidity, lots of bretts in the mix i would think, white wine notes abound here, lots of other fruitiness to though, like pineapple, white peach, and the white part of a strawberry that isnt ripe yet. farmy and funky too, musty and dank, wet and dry at the same time, hay and straw and grass, old worldy but fresh, simple here on the grain base, raw wheat and pils malts might be all, refreshing for something as nuanced as this, and minimal on the acidity, just a light lemony pucker as it winds down. smart little beer here, especially this time of year as spring dawns, i bet it will develop well over time too with the spontaneous elements at work. i could drink a ton of this, which is rare in these styles for me. i will miss these guys more than anyone when i move away from denver...
