another rad little cork and cap bottle from trve, this is a blend of one and two year old spontaneous beers, and its awesome. perhaps intentionally bottled still, or darn near it. i love the look of the bottle, the natural cork, and the funky beer inside. its straw yellow, washed out looking and thin, with no more head on it than some patchy lace on the edges of the glass, close to lifeless visually. aroma though is amazing and interesting and wild and bright, with a somewhat familiar mix of funk and tang that i can identify from some other wild trve beers in this format, but this seems a little more tart and exceedingly mature in terms of wood profile, brett complexity, and overall dryness. my mouth waters to taste it, and there are cool notes of fresh lemon and lime, as well as rustic aspects of wet animal, decomposing hay, and must. its equally dynamic in the flavor, some obvious lime and elderflower notes for me on the fruity and floral side of things, but also a real wet basement sort of vibe to the fermentation profile, an aged hop thing, and really very much a lambic type beer overall, especially on the grain side. the sourness is middle of the road but the yeast character overall is real distinctive, while also being traditional to me. really cool spontaneous beer here, a great blend, and a beer that will be awesome over time in the cellar too. i want my wild beer to have some life though, and am bummed this is flat, but it doesnt hurt the drinking experience as much as it usually does for me, and i came away super impressed with this one. love trve and everything they do!
