Applying a delicate hand on the taste of the spontaneous leads the brewers of TRVE and Safta down a whimsical but sour path. Decorated with rose water and pink peppercorns and the dainty wild ale comes alive with lightness, floral and spice.
While all the descriptors shape a pinkish tone, Translator's Note rather pours a rich goldenrod hue and cast in a translucent yeasty haze. Bold bready notes along with citrus, peppery spice and a floral suggestion of honeysuckle. An underlying earthiness of dry cork and burlap come to mind as the taste leans in with a rich sourdough breadiness and a light sweetness of agave, lychee and a suggestive hint of pulled candy.
Then the fruit begins to blossom over the middle palate as a racy taste of lemon, green apple, pear, white grape and kiwi all tease the senses with a light profiled fruit injection that's all yeast derived. A counter from spice comes with peppercorn, vinous spice, weathered oak and a woodsy tannic quality of balsa. Light in bitterness, the beer's mild mannered sourness applies an acidic overlay to the session with a dry cidery, champagne zest.
Medium light in body, the beer's rich wheat malts and suspended yeast gives a light creaminess of Witbier, but with a more sour demeanor. A medium quick finish of dried citrus is followed with a medium length aftertaste of sourdough and burlap once more.
