this is real heady, cant believe my homie saved it for me all this time, was sure hed get drunk and smash it and not remember or something, but there it was waiting for me, legendary! this is a cool one, and i have loved their spontaneous stuff. i guess this would be a crack at gueuze type blend, with the three different vintages. the packaging is amazingly cool here, and the beer is delicious, but if i am being hyper critical, its not my favorite of their blends. it seems to me like it has a lot more younger beer in it, there is a less mature brett profile, even less woody than some of the others, it seems nto immature but maybe less complex than their best, younger and brighter, which has its appeal too, but not on the edge of lambic like some have been. i get high citrus and white wine properties in the sour profile, a sturdy and kind of fresh tasting wheat malt base, and a lot of minerality. its dry and a little sharp, its got some rustic saison type esters and funk to it, green pear, green apple, green grape, and a tea-like herbal layer as well, more of that as it warms and as the acidity seems to magnify. light honey, new oak, soft vanilla, ripe peach, and wet animal, its all there, and its delicious, but it almost tastes more like some of their mixed fermentation stuff than the truly spontaneous ones i have had from them. maybe more cellar time would change that, and i am not complaining, this is delicious, it just doesnt show the older parts of the blend as much to my palate, and lacks the distinctive wildness i was hoping for in the ferment, a little less lively than i like too, not still but not effervescent either. that said, its another super cool beer from trve that just maybe is a little more subtle than anticipated, quality on point, its oddly even almost refreshing for what it is. thankful to have been able to partake in this! i hope to some day try it with a bunch of time on it...
