Poured into nonic
A: Brown-deep amber color with a large ,3 finger, eggshell white head.
S: Honey and nutty aromas , caramel malt, slight earthy tones.
T: Vibrant and dry Nelson Sauvin hops compete with sweet orange and honey flavors. Strong but not overwhelming malt backbone- caramel and chocolate. Lovely balance between bitter hop flavors, sweet flavor additions of orange blossom and honey and malt backbone.
M: Medium to slightly viscous body with a moderate to low carbonation.
O: Relic made a truly unique and lovely beer here with The Falconess. The balance between its flavors is excellent and makes this a very satisfying brew. This beer has something for everyone.

Appearance: Arrives with a modest head capping the amber liquid; a few squiggles and dots of lace remain
Smell: Caramel, with a honeyed, spicy tone
Taste: Caramel forward with the honey adding another sweet element; while there is some balancing bitterness, the overall profile leans to the sweet side; boozy, as well
Mouthfeel: Medium to full body with moderate carbonation; warmth in the gullet
Overall: Another nice beer from Relic, though it is a bit sweet for my palate

Wow, it seems like every beer I have from Relic is better than the last. This is my favorite one so far. Relic seems to be all about the super dry beers, which I love, and this one is no exception.
There's a nice fresh floral smell that's obviously from the hops and the honey.
The taste is malty and dry with some really nice lingering aftertaste from the hops and honey. Very floral without being too sweet. The dryness is what makes the mouthfeel so amazing on this beer and most of the others I've had from Relic. It's a bit syrupy but not sweet, and somehow the whole thing ends up being refreshing despite it's heavy taste. There's not much yeast flavor, which I think works well. It's all about the balance between the malt, honey, and hops.

A-Pours a ruby brown color with a mild head. Hard to tell anything else from such a small sample.
S-Definitely a unique nose. Smells like a mixture of cooking spices and bath soaps. Also very malt forward. Sweet, spiced cookies. Herbs too.
T-Sweetness mixed with herbal hop spiciness and that combo of almost rosemary and bath soapiness.
M-Fuller in body and fairly creamy. Moderate bubbles. A bit sticky.
O/D-I can see why some palates would be very pleased by this but its not for me.
