Appearance - Pours a light copper with a fist full of foamy white head. Warning: highly effervescent upon opening!
Smell - spicy hops, spicy belgian yeast (clove, pepper), grainy malts, honey aromas, white grape, and hints of oak.
Taste - Spicy hops followed by the belgian yeast. The grainy malts come through next followed by the honey aromas. The white grape and oak help to finish off the brew.
Mouthfeel - Medium bodied with high carbonation. Finishes with a touch of stickiness with the hops, malts, and barrel characteristics lingering.
Overall - A good representation of the tripel by barrel aging it in french oak bourbon barrels. However, I question if this was bottled too soon as I may have lost one-third of the bottle as foamy head that wouldn't stop flowing out of the bottle. Here's hoping that my second bottle will settle down with some age.
