man, i havent had nearly enough beer from these guys! every time i do, i am floored by it. this one is a heavily fruited wild type saison, with a rich red wine profile, a lot of mature funk, a clean bright bacterial lemony tang to it, and a dry but intense, almost gritty fruit texture, cherry and astringent boysenberries and jammy blackberry too, all seemingly about equal in here, but the tart and tannic and sour elements are all pulled forward by the fermentation profile, which i think is unique to these guys, even mix of funk and acid, almost berliner-esque at first, but fully wild and alive in the end, a journey there, killer. the fruit is super intense, stains this dense almost blood red or beet purple, mixed together. light body though for its strength, it drinks slow from flavor intensity not from booze or body or residual sugar or anything. it all seems very fresh, it warms up nicely, and i think is both on trend and quite distinctive at the same time, which is increasingly hard to do in this style. really next level stuff, makes everyone else's seem cheap and forced...
