Pours to a murky golden amber toned body. Head easily reaches two inches but fades super fast leaving just a skim and broken curtains of lace. Smell is dank and alcoholic. First sip is a bit thin on the tongue. Rye does play but it is very soft in terms of spice. Hope are piney and prickley sweet. Overall the flavor is a little hollow for the style.

Cut from an earthy grain cloth, the West Sixth brewers turn to rye in order to accent the bite and rustic qualities that also show up in most hop varieties.
The Mammoth Cave IPA pours golden bronze and with a faint trace of haze. Above its wisping white head forms the billowing hoppy aromas to capture a sense of white grapefruit, under-ripened orange and green berries. Yet once its steely caramels latch onto the tongue, a sense of balance is realized.
As the hops unfold across the palate, the caramels subside yet the earthen, husky grit of rye remains. The vibrant perfume of citrus translates into the bitter pithiness of grapefruit and orange ribs, and later into the leaf, stem and resin of pine. As the rye nearly matches the impact of hops, those grains become the vehicle to weave the hops and malt together.
As the ale continues to dry and crispen, the hops project even more in the beer's waning moments, finishing with the bitter resins of freshly shave cedar and sassafras with the unsettled bite of rye remaining. An afterglow of citrus wash over the palate deep in aftertaste.
