Venturing into the world of Belgian abbey brewing, The brewers at West Sixth brings the dubbel ale to the bluegrass with supple sweetness and the discerning fruit to spice balance that make Belgian beer so distinctive and charming.
Observance pour with a hazy rust color and capped with a frothy swath of sea foam. Its mannered fragrance is of candied nuts, cinnamon, cherry, apple and a bright floral and bubble-gummy display. To taste, the beer eases onto the tongue with a rich steely caramel flavor and the same nutty sweetness that carries over from aroma.
The ale patiently releases its secrets across the middle palate as the senses acclimate to its boldness and the ale begins to warm. With the beer's rich sweetness well intact, the fruit flavors pull forth with cherry, date, fig and apple with a spicy counterbalance of cinnamon, peppercorn, toast and earthy cumin. Trailing alcohol warmth is vinous and playfully tart, remiss of rose wine.
Finishing with labored sweetness and lighter than typical carbonation, the mouthfeel is malty, creamy and rich with trickles of cola. Medium, but on the fullish side, the beer lingers with caramel and spice, just shy of the bright effervescence of the classic Belgian abbey.

Very subtle aroma, with brown sugar and a touch of pear ester.
Flavor is lightly sweet, with bubblegum ester dominance and a hint of banana that carry into a dry toasted malt finish.
