Brewing up a beer for another great cause, the California camp fire disaster tugs at the heart strings of Central Kentucky as a stronger, West Coast styled IPA emerges. West Sixth Brewing leads the charge with a classic beer where a portion of the proceeds go directly to those affected by the fire.
Resilience IPA pours a classic pale and haze amber color before crowning with a frothy eggshell foam. The traditional California hop perfume of pine and citrus swirl about the nose while the sweetness of caramel, granola and honey lays a malty foundation on the tongue.
The moderately malty sweetness begins to dissolve on the middle palate, replaced quickly by a bold brunt of hops. A boost of pink grapefruit and oranges bring a firm and flavorful brightness to the tastebuds along with hints of apricot and peach. As the ale trends bitter, the sharper and more botanical flavors of fresh pine shavings create a grassy film of bitter resins on the late palate.
Medium bodied, but fuller for IPA, the bolder beer dries considerably on the finish but never to completion; continuing to balance the hops with caramel malts. But the ale is certainly hop and bitter dominant as the aftertaste is long with peppery, resinous, vegetal bitterness in true Northern California fashion.
