Taking the IPA on a cosmic Galaxy ride, the West Sixth team uses the hops of this namesake for a new, radiant and captivating tour for the tastebuds.
Starting with strong aromatics, its the scent of stone fruit that gives the citrus and tropical notes a boost in scent. Pale gold and with a slight overcast of amber, the frothy ale soon gives way to a moderate and savory malt sweetness of light caramel and bread crust to frame a mild granola character.
As the malt flavors dissolve, the path is paved for the hops which usher in a beautiful display of pink grapefruit, green berries, lime and orange. As the piquant zest of citrus rests on the middle palate, the bolder fruit impressions come through with apricot and peach for a nearly roll-up candied taste. Pineapple and passionfruit trail into a racy bitterness full of cedar, green tea, verbena and chive in an almost west coast form.
Medium bodied and trending dry, the beer never shies away from a crisp, bitter and refreshing late palate, finishing with a gin-like spice and a medium long aftertaste of herbal hops.
