With this beer, X, we bring you a symbol of our ten years of love & triumph with the culture of SOB. A Belgian-Style Tripel, & our first clean bottle conditioned beer ever, with each bottle brought to you from our hands. This beer marks a decade of creation with each 750ml bottle being hand-filled, hand-labeled, hand-painted, hand-dipped in wax, & handed to you.
True to SOB’s original Belgian inspiration, this beer is yeast-driven with a one-of-a-kind custom genetic hybridization with our friends at Chicago’s Omega Yeast. Banana esters, a touch of clove, low phenols, a hint of bubblegum, & a distinct finish of perceived sweetness that fades as the beer warms.

Cloudy orange body with a finger of eggshell white foam and light lacing. Smells of black pepper, yeast, lime drops, and esters nose. In the taste I am getting flowers, big white pepper, lemon zest, estery yeast, faint banana, earthy spice. Taste has more complexity, nose is deeper. Feel is sharp, dry yeast with hop bitters on finish, medium light bodied. Love that anyone is making a new tripel in 2022, but even more so enjoyed that this is a stark take on the style from what I have had from them before, way more peppery and estery in character.
