I wanted to test the aging of some bottles of Le Castor, Kleine Weisse was one of them. I bought two bottles and first tasted it in 2015.
My first review was: Clear yellow straw liquid with a very small foam head at pouring but it doesn't last long.
Nose is very subtle, but lactobacillus are noticeable along with bread crust, lemon.
Beer that has a high drinkability with his 3.8%abv. Slight lactic acid tartness, lemon, wheat. Refreshing but not complex at all.

Less than 3 years later, I decided to pop one out!
So at first I drank it without the yeasty bed. I could notice the same thing as the first time. Same color, same nose, same taste, it was still the same refreshing lemony, shy nose beer it was before. I decided to get the good stuff from the bottom of the bottle then it became more exciting.
It was now an hazy light orange with a ring around the glass, leaving lacing.
Nose was far more lemony, even could detect some funk and dustiness, far more enjoyable aromas, cloves along the way.
Taste is still light tartness, wheat, hay, more yeasty now that the whole bottle is in the glass.
What didn't change is the high drinkability, perfectly carbonated, aftertaste is longer as well with that sparkling feeling inside the mouth.
The beer wasn't complex at the beginning, aging did gives it a bit more complexity, but not enough to make it worth it.
A great experience I'll continue with some of their other concoctions!

Clear very pale blonde colour, no head and no lace. Smell is big on lemonade, wet wheat, citrusy, kind of bland though. Taste is lemony, earthy citrus however flavours are a bit muddy, light tartness on the finish, quick and clean aftertaste. Highly carbonated, light bodied. Just OK, its drinkable but fairly average and un-remarkable.

Bottle: Poured a light yellow color Berliner Weisse with a medium white foamy head with good retention and some lacing. Aroma of light tart notes is not as dominant as I was expecting. Taste is a mix of light tart notes with some subtle wheat malt notes. Body is about average with good carbonation. Not bad but falls a bit short in term of the level of complexity I was expecting.

Nice cloudy straw color with a thin white head.
Really nice nose, lemon, tartness, floral and a little bit of leather.
Sadly it doesn't taste much in the mouth, it has a nice tartness, a little bit of lemon too but I feel like the yeasts din't develop enough flavors. Maybe if it was older it would be better.
I gave a 5 to the feel because it has the perfect mouth feel for a Berliner Weisse, nice carbonation and fuzziness.

A: Looks like a typical Berliner Weisse. Hazy yellow color with a pure white head that doesn't last super long but is definitely there. Lacing is decent.
S: This is quite something. It smells definitely sour. Green apple skin, lemon juice and zest, no hint of vinegar in there. But, it's also very much a wheat beer with a strong note of banana, cloves and some nutmeg. A sweet backdrop with sweet apple juice. Wonderful!
T: Slightly less sour than expected but still sour. Lemon zest, juice and green apples tartness are all there again. Banana is not as strong as in the smell, but still definitely present. Cloves in particular seems present but blend in surprisingly well. Nutmeg and apple juice again present but it is slightly less sweet than expected. Very refreshing.
M: Wonderfully light and fluffy. I don't know what yeast Castor is using but it's by far one of the best yeast base in all of Quebec micros.
O: This is a wonderful Berliner Weisse with amazing balance. A much different animal than Trois Mousquetaires offering but one I consider superior. Highly recommended.
