Brewed with malted barley and wheat, this wild saison was infused with organic hibiscus flowers and dried rose hips. The beer was then refermented with Brettanomyces on spent sour cherries, used previously in our Farmhouse Cerise. Although used once before, the cherries still have flavour to contribute, and complement the hibiscus flowers without overpowering them.

Bottle: Poured a deep cloudy dirty pink color ale with a small foamy head with OK retention and no lacing. Aroma of hibiscus and light berry/cherry notes si pleasant enough. Taste is a mix of tart notes with light funky ester with some hibiscus and berry/cherry notes and light residual sugar notes. Body is full with limited filtration and OK carbonation. Not bad but lacking some cohesion and attenuation.
