Nice Repo Man soundtrack reference.
Glowing tawny copper, bright clarity, tan foam, a wispy skim across the surface. Clinging ring at the edge with spotty lace.
Phenolic, yeast driven clove aroma, signature Belgian spice.
Dried apricot fruity sweetness, bitter walnut, dry pepper, in the finish the dryness trumps the sweetness. Robust and full bodied, this is definitely a snifter sipper. Clean with no flaws, the chamomile comes through in a light floral sense. An experimental brew that would be interesting with an assortment of other oddball ingredients, if brewed again.
Cheers to Jim for this creative brew!

On tap at the brewery, a dubbel made with piloncillo (penicilin? I kid), anunrefined Mexican sugar and Egyptian chamomille...If that isn't enough to make a monk turn over in his grave I don't know what will. Before I get to far, will American brewers stop bastardizing a classic style of beer? Please!
Anyway, a typical un dubbel pour of clear copper with red notes, a light tan head with poor retention...A confusing aroma of the candied sugar you expect infused with medicine (I'm guessing this is the chamomille), just terrible...The taste again starts of like a dubbel lots of sugar and plums then the medicinal notes come back again, just plain awful.
Avoid this beer.
