This was a beer that Chris Duffy (our morning brewer) has wanted to make for a while. Sahti is a Finnish style farmhouse beer, hugely popular in the Nordic region. For this batch, we started with loaves of rye bread provided by our Pub kitchen, toasted just before we began brewing. We steeped the bread in hot water, and allowed it to soak for a couple hours, in a similar way that Kvass is produced. Once the bread was then removed, we used the water that was left behind for our mash which included rye malt, beechwood smoked malt, and juniper branches to name a few. As is tradition, we boiled briefly for a few minutes, with a small amount of hops added afterward.
