Served in a snifter at the brewpub.

A quad aged on French oak and cognac? Sign me up! This stuff pours a bleak dark sienna topped by finger of dark-ish khaki foam. The nose comprises dark fruits, fig, very light roasted malts, light dark chocolate powder, light oak, brown sugar, light sourdough, and a touch of maple syrup. The taste brings in more of the same, with those dark fruit, fig, and spicy notes really shining through. The oak isn't very expressive, which may end up being a positive here (less muddling and whatnot), and the cognac seamlessly blends with everything else. The body is a straight medium, with a light moderate carbonation and a drying finish. Overall, a very nice quad, one that could easily have gotten out of hand with its own complexity, but one that instead comes across as pretty damn tasty.
