Three different varieties of evergreen, courtesy of Tait Farm, highlight this Cork and Cage release. Just the tips of Southwest White Pine, Norway Spruce, and Douglas Fir were blended with Meyer lemons, vanilla beans, and honey into an ale base consisting of 90% Slab Cabin and 10% Double D. The resulting ale has a thick and creamy head, vanilla and hops on the nose, citrusy pine on the palate, and finishes smooth with a hint of vanilla.

Poured from a bomber into a snifter at the brewery. Part of Otto's 'Cork & Cage' series.
L: Pours a clear deep amber color. Thick tannish head leaves nice lacing on the glass.
S: Evergreens and citrus hops. Perhaps a bit of mint/juniper.
T/F: A mild malt backbone with an astringent evergreen and minty flavor. A little more herbal than expected. I wasn't certain about the flavor at first, but it definitely grew on me the longer I sipped it. Fairly dry at the finish.. moderate carbonation as expected for an IPA and the hoppiness is about what you'd expect given that it's a mix of an IPA and an Imperial IPA.
O: An interesting effort from Otto's, and the minty/evergreen flavors augment and almost dominate the hop profile of the IPA. I'm glad I tried it... but not sure I'd snag another one and if nothing else they're keeping it interesting.
