Appearance: Very dark ruddy brown with a medium-sized, light tan, foamy head with good retention. Very little lacing.
Smell: Sweet, with some typical wheat aromas, dark bread, light alcohol spice and a little phenolic? Hmm.
Taste: Malty and very sweet. Candi sugar, alcohol, molassess, and a hint of raisin. Slick, sweet, medium-duration finish.
Mouthfeel: Medium body, oily/syrupy texture, low carbonation
Drinkability: Drinkable and enjoyable, but nothing special as far as dubbels go. Many better ones out there, and many better brews at Ottos.

A chalice served at the brewpub.
A: This is the clearest dubbel that I've ever seen. It is actually translucent! The color is amber, fairly similar in tone to an amber bottle. A small coating of head sits atop the glass.
S: The aroma is darker candi sugars and Belgian yeast. The result is a dark, sweet aroma touched by dryness.
T: The taste reveals the requisite depth of a dubbel, lots of candi sugar, yeast and caramel. Alcohol warmth is present but never overtakes the body of the ale. A chewiness pervades the ale, lots of malts coupled with the sugars.
M: The taste doesn't wow you but it never lets you down either. The candi and yeast are nicely paired together and they nicely support the strength.
D: A glass or two is sufficient, as the alcohol is pretty darn strong.

12oz goblet at the brewpub..
appearance: a murky reddish-brown with the appearance of a cask ale. nice chunky glass goblet adds to the royalty. something about the look of this beer reminds me of raspberry jam.
aroma: candi sugar and lemon jump out, some alcohol tinge in the aroma. light on the nose overall.
taste: alcohol smell carries over and zaps you unexpectedly for a 7-percenter. malty taste with sour citrus notes. confusing and way way too 'fresh' for a dubbel. satisfying in its sweetness but how dare they call this an 'abbey.'
