Bottle via Tavour. Poured into tulip @50F.
Ok… first 1/2 of glass…
Essentially a brownish red brown from barreling. High carb fizzled head immediately. Nose was faint but wood, cherry and funk did show up. Taste was flat, woody and little fruit. Body was light, bright with carb burn. Thinking my first beer from pFriem. Very Disappointed .
But then I walked away for about 20 min before returning to glass. Nose and flavor had marvelously evolved… both very much more complex and enjoyable.
Crazy, this beer probably ended up being finished at 60F… but it was soft, remarkably big on cherry enhanced by wood. Go figure.
No mistake… definitely beer and a lambic… but it was almost like a wine after decanting and allowing to rest and breathe.
Loved 2nd half.
