Poured into a Gavroche tulip. Pours a hazy orange amber with active carbonation and a big three finger ivory head with great retention and thick pillowy lacing. Aroma of biscuit and bready malt, graham cracker, earthy spices, inviting. Flavor is dry graham crackery and bready malt, leather, light brett; earthy spicing from the grains of paradise. Finishes malty with a nice light brett and grassy hop bitterness; lingering earthy and malty flavor. Medium bodied with active carbonation. This is exactly what I hope to find when buying a biere de garde: good malt flavor, light but distinctive wild yeast, interesting rustic flavor. Good dry malt flavor, and earthy spiciness. Wild yeast adds interest without being obtrusive. This smelled great and tasted very good. One of my favorite takes on the style to date. I was a little nervous buying this bottle that was quite a few months old at the time, but it claimed to be storable and sounded interesting. I'm really glad I took the chance: this is very enjoyable.
