Notes / Commercial Description:
Our Imperial Oyster Stout is made with pale, caramel, roasted, and chocolate malts. Oats are also added to give the beer a fuller and sweeter taste. The roasted malts give the beer its dark color as well as its intense flavor and aroma. The flavors of toffee and chocolate are prevalent but not overpowering. The beer is hopped with Willamette hops. Since the beer gets so much flavor from the malts there is not a lot of hop flavor. There is just enough bitterness to compliment the sweetness of the malt. Finally, freshly shucked LA oysters were added to the boil. The salt from the oysters gives the beer a more intense aroma and mouthfeel.

16oz pour into pint Lures

A- Nice creamy head dissipate leaving ring.

S-Aroma is slightly sweet, dark malts, chocolate, caramel, coffee, licorice.

T-Taste is slightly dry roasted, dark malts, cocoa, wood, burnt coffee and hint of salt.

M-good mouthfeel with a longlasting bitterness, nice milk chocolate finish

O-decent stout first time having one with oysters.

Had this at a cajun restaurant last night and was disappointed in it. It was a nice stout but it lacked the complexity of an imperial stout. The roasted malt was there, and a little crystal malt, but it was lacking everything else.

If this was sold as a sweet stout, I would've believed it. An imperial stout... I don't think so.

Poured into a pint glass pitch black, with a creamy off-white head.

Smells of sweet toasty malts, and dark caramel.

The taste is of burnt and roasted barley with a peppery bite of carbonic acid. The backbone of this brew is a sweet an syrupy flavor with similar caramel notes to the aroma. Medium-thick body with a viscous and silky mouthfel.

Good, but lacks depth.

Served at the Half Shell Oyster House, Gulfport, MS

A: Black with a half finger tan head that settled nicely. Significant lacing.

S: Nothing right away. As it warmed, I picked up smokey chocolate malts.

T: Follows nose with a dash of salt on the end. Let this one warm up for maximum taste. The smokey malts really shine. Smooth. Sweet. Robust. A dash of caramel. More regular than imperial.

M: Medium with chewy carbonation.

O: One of Abita's better offerings. And a great deal at $2 a glass during happy hour. Went well with my shrimp and oyster po-boy.

S Faint chickory coffee
T Pretty good chocolate milky malty goodness.
M Creamy mouthfeel, nice chickory aftertaste.
O Very pleased, creamy and delicious but not overbearingly heavy, which would be good if one wasn't into the heavies. Had on tap at Frillys in Denton.

Had on tap at Cotton restaurant in Monroe, La.

Appearance: Ebony, with a about a knuckle and a half of rocky tan head. Settled to about a 1/4" with sticky lacing for the remainder.

Smell: Smelled of roasted malt, coffee, minimal spice, and a trace of oyster.

Taste: Tasted very much of roasted malts, coffee, some chocolate (picture Turbodog on growth hormone). The oyster/salt at the back end is a very nice touch, a good change up and works very well here.

Mouthfeel: Very smooth and creamy. Extremely drinkable with nice viscosity.

Overall: I wouldn't say "Imperial" stout...but very impressed with this beer, would consume with abandon if this were bottled. My first oyster stout, and I must say that I'm pleasantly surprised by how well it works with the other flavors. The oyster/salt is layered so well, and as much as I did not want to agree with it -- I just couldn't fight it. Abita, shut up and take my money. Very good experience, will return for more tomorrow.

16 ounce pint - $5.75 at Taco Mac in Kennesaw, Georgia.

Appearance: What appears to be a thickish, black body, but this joint has the late-night, past midnight lighting scheme (at least until the crank it up to run us off). Creamyish, khaki-colored head with some nice, glass-coating action present.

Smell: Well-roasted malts, with a quality of Italian roasted coffee beans, giving a predominately note easily labelled 'bitterness'. Some touches of smooth, sea salt chocolate, a little dark fruit, and just a faint whiff of the Gulf of Mexico (yes, they can capture that essence, I'm told).

Taste: Deep chocolate upfront, with ample roast, caramel maltiness. A little nutty oats, maybe even a hint of vanilla and charred, toasted pale malts. Slight salty, briny quality from the Gulf oysters. Low prune-like fruitiness. Minimal hop character, bitterness. Chocolate and coffee retained on the finish, minor bitterness, seemingly a product of the roasted grains, mainly, but also a little bit of liquor and oyster liquor.

Mouthfeel: Medium-bodied. Medium carbonation. Smooth and satisfying, like a snotty oyster going down the ole gullet.

Overall: Not bad! This may be my favorite of the rag-tag Abita Select bunch.

On Tap at Snellville Summit's Wayside Tavern December 2011. Reviewed from notes.

(Appearance) solid black no light. Very thick almost nitro quality head of a light tannish color,Thick with heavy retention. Solid appearance. 4.5

(Smell) Creamy milk chocolate cocoa nibs and a hint of chocolate. Smooth and airy aroma. Lacking on potency and diversity of taste. 3

(Taste) sweet, smooth buttery flavor, mild cocoa nib flavor, sweet coffee and cream. mild seafood finish reminiscent of buttery scallops and other mild shellfish. buttery finish is mildly tart and robustly delicious. Quite complex and highly enjoyable. 4

(Mouthfeel) smooth like silk, like smooth sea foam, almost nitro smoothness. Oysters likely lend additional smoothness to this brew. Good pair to the taste. 4.5

(Overall) Really fantastic experience. I'd recommend it to anybody and I would suggest not to fear the oyster. It's subtle enough to make this a distinct but delicious approachable brew. 4

Served on-tap somewhere in New York state.

Appearance is dark black with some tan lacing going on. This oyster stout has a nose with roasted malts, chocolate and some light spice. Upon sipping this imperial stout, I am impressed.
From bitter chocolate to dark fruits, it is here and well balanced. Mouthfeel is medium and finishes smooth. Overall, a tasty beer from these guys outta Louisiana.

Draft at the Pour House in Westmont, NJ.

Pours pitch black with a one finger light beige head that quickly settles into a thin lasting ring.

Roasted malt aroma that's slightly smokey with hints of dark chocolate and peppery spice.  Along with the chocolate there are hints of oatmeal anise and coffee bean.

Palate is on the lighter end of the spectrum with an assault of zesty spice, overly roasted malt and boozy heat.  Lots of burnt malt with hints of coffee roast, oatmeal and dark chocolate.  Heavy spice presence with lots of pepper/peppercorn, licorice and cinnamon.  Odd assortment of flavors but not really much of an oyster flavor.   Finishes with a shit ton of booze/warmth in the finish.  Abrasive flavor profile and the abv isn't well masked making it harsh and hard to drink a whole glass.

This beer pours a very dark brown color, almost black. There is a finger of tan head resting on top. The head has good retention, and it leaves some scattered lace behind on the glass. The nose is of dark roasted malt, chocolate, and coffee. There is also a sort of lightly salty unfamiliar aroma here as well, that I am going to attribute to the oysters. It is not a bad smell by any means, I think it works well here for sure. The taste starts off with a hefty dose of roasted malt. There are some nice flavors of dark chocolate and coffee. That scent that I picked up in the nose I am getting in the flavor as well. It isn't a strong it's just something different, but it really works well here and the taste benefits. The finish leaves some lingering roasted bitterness, chocolate, and coffee on the palate. This has a medium body and good carbonation. It goes down easy and has a really smooth silky feel. There a good amount of roasted bitterness and some nice sweetness. There is good drinkability here. It goes down easy, and I could definitely have a few of these in a sitting. Overall, I thought this was a really good beer and really good stout. This was my first oyster stout, but I am definitely keeping my out for another one to try. I recommend trying this one out.

Poured @ The House Pub into a Maudite snifter.

1st Illinoian to review this bad boy.

Pours an opaque blackened color with a pillowy two fingers of light tan head. Nice retention with a bit of small bubbles as lace.

The nose is quite roasty and malty but doesnt warn me of a sweet beer but rathet a robust one. A bit of espresso and cream is also noticed.

The taste is indeed robust. And mighty tasty at that. A roasted/toasted malt taste speaks loudest, followed by some espresso, cocoa, with a creamy finish akin to a milk stout. For 8% this ABV is very well masked.

The mouthfeel is very smooth and creamy. Medium-bodied and packing a suiting amount of carbonation.

Overall, very impressed with this one. Very robust, creamy, and well-rounded. Glad I had the chance to enjoy this brew. Drinkable and solid as hell.

Reviewed from notes taken last Saturday at The Avenue Pub, New Orleans, at around 4:00am. 10 oz. pour to proper glassware.

A: Perfectly dark, a dense blackness. Small head, barely a skim of beige, but decent lace speckles with a gauzy film and limp ring.

S: A little smoky and an interesting salty scent. Light cocoa. Could have been stronger, but there were some competing aromas in the room.

T: Fudgy chocolate, a little acid that balances well. Ashy dryness then some tannic fruit skins. Mmm good.

M: 'Oatmeal' texture, which means a refined smoothness. Maybe a little thin, but that's not 'off' from the half dozen or so versions of similar stouts I've tried. Medium body and silky feel, some lingering bitterness. No indication of a purported 8% ABV.

O: Quite likable. Bartendress admitted to not usually liking Abita's beers but stated 'this one's really good' - and I agreed. Drink another? Sure, why not? Subtle cocoa and a little syrupy caramel, then drier. I've had a fair number of oyster stouts now and rank this among the better ones. Worth seeking out.

A: The beer is near black in color but has traces of dark amber when it is held up to the light. It poured with a thin off white layer of bubbles covering the surface.
S: There are aromas of oysters in the nose along with notes of roasted malts.
T: The taste has flavors of roasted malts and toffee along with hints of sweetness and chocolate. There is a bit more maltiness compared to other oyster stouts.
M: It feels medium-bodied and very smooth on the palate with a bit of dryness in the finish.
O: The beer is relatively easy to drink and goes down smoothly.

Abita Oyster, 32-oz growler bought at Whole Foods Bowery in NYC for $6.99.

Appearance: My assertive pour produces a massive three-finger head that promptly recedes into a regular one-finger head. Shiny soapy bubbles, beautiful. Good retention.

Smell: This is the one oyster stout that really has got the brininess. I wish I could have an oyster right now and I would dip it in the beer! Roastiness abounds, and also bitter coffee.

Taste: More of the same, with an intensified coffee taste and some chocolate but less of the oyster aspect. As it warms up, it becomes more interesting and flavorful, but it still falls flat at the end and way short of being an "Imperial". Sugar and coal around the edges.

Mouthfeel: If this were a regular stout, it would be alright. But Imperial? Average body, watery thin, medium flavor. Not dry, though, which I appreciate in a stout.

Overall: The oyster is well done, and this sure drinks well. But otherwise... a little bland. Although I guess I should expect this from Abita!

Enjoyed this beer at the Cove in Baton Rouge at the Brasseurs a la Maison release party for the beer. Great selection from Abita, one of their better beers by far.

A - Jet black with a small cream head. Poured into a 16 oz pint glass from a jockey box so probably would have looked better in an Imperial Pint Glass on nitro but you couldn't complain about the pour. A

S - The salty oceanic smell combined with the dark malts to create a very enticing aroma. I really enjoy the smell of this beer. A+

T - Exceptional taste, smooth, deep flavors. Not as roasty as many stouts but having tasted this beer before the aging process pulls much of the harsh bitter grain notes out of the beer. The briny oysters enhance the flavors just enough for you to notice that something is different about this beer than other stouts or porters. Even though there is a good amount of alcohol in the beer, very little heat from the high level. A

M - Creamy and smooth. Would be great on Nitro but since we were drinking out of a jockey box we could not complain. Low carbonation limits the harshness that could have been present. In my opinion, what a stout/porter should feel like. A

O - Another great Select offering from Abita. It is not fair to craft beer drinkers in LA that this beer will only be offered on tap and very select accounts (hence the name I suppose). Would be great if bottled so that the home consumer could age the beer and enjoy at home with friends. Two pints were not enough for me. A

Not sure what they mean by imperial, but I don't think it's an imperial stout. It's medium at best, but nice and creamy.

This is a great oyster stout... Andygator is bottled due to the Abita homebrew contest... so this homebrew contest winning brew, being miles better than the gator, deserves it's spot as a big bottled Abita brew.

Come on Abita!!!
