Brewed using German Pilsner malt, Scottish ale malt, and English crystal malt. True to fashion, we added a LOT of hops, using Azacca and Amarillo. We chose not to filter this beer, preferring to “fine” it instead.

Alewife and I decided to "Drop In" to this brewery on 24SEP20, during a recent VT va-ca... Had a 16oz pour of this, at $6.00.
Was a clear, dark golden color, with sparse carbo. Had a creamy, thin, light tan head, with light lacing. Smelled of rindy citrus, very west-coast like. Pineapple and grapefruit stood out the most. Was a medium to medium-plus for body, and was very smooth and creamy on the tongue.
Had a nice malt backbone, with toast and caramel. Then had a solid layer of citrus, with more grapefruit and pineapple. Was piney and resiny, and only lightly bitter. A solid brew! Prosit!!

I could say "master class" or "this raises the benchmark high"... this is reality, this is what a DIPA should be close to. I'm not going to go on about perfection or that its the best but it is what it is. Dropping layers of hops like RTJ drops rhymes. So ridiculously delicious and so next level that most beer geeks wouldn't know what hit them until half way through the 3rd can. Do I want hazies to go away, not really. Should real DIPAs be respected, for sure.

Pours out a copper and amber color (old school, west coast style) fluffy, off white foam cap slowly bubbles down. Good lacing.
The nose is kinda weird and interesting. Sweet caramel and honey white bread pops right out from the medium bodied malt side. The hops give off sweet red fruity aroma's, like bing cherries, strawberry, pomegranate and pineapple.
The flavor hits you just like a classic West Coast DIPA. Harsh piney bite, dried leaves and dry earthy notes, peppery in the middle, with some added heat. Dried red fruity hop current is nice, grapefruit and back to a dry, earthy bite for the finish.
Among all of the hazy golden NEipa styles this really does come across as a throwback style. A very well executed one at that. The hop charecter is very bold and the darker toned grains of the malt give it a bigger malty effect. If you want a flashback of what dominated the IPA scene 10 years ago. Grab one.

West Coast Double style, Bigger malts with some serious depth as the Scottish and German pilsner add a huge backbone. Earthy, dry, bitter hops with a light fruity current, but the leafy bitterness is classic. Balance is pretty much on point here.

This was poured into a tulip. The appearance was a murky burnt orange color with a quickly dissipating finger’s worth of white foamy head. Mild milky white colored foaminess slides around the glass in a graceful sticky sort of way. The aroma takes in some grapefruit bitter rind. Light caramel burnt backbone. The flavor brings the sweet malts and hops forward to savor some of the bitterness nicely. A touch of dry bitter rind hits the aftertaste and finish. On the palate, this one sat about a light to medium on the body with a nice sessionable smooth feel to it. Good carbonation. Low riding bitterness. Overall, nice level DIPA, just seems well centered all around. I would have again.

Vermont Brewfest. Sample on tap. Pours a coppery color. Hops are quite pungent. Not sure I'm in love with the hop bouquet here but it's definitely got some pop to it. Floral, piney, candied grapefruit. Caramel malt. I get more of the same on the tongue but with a strong slap of bitterness. Potent hoppiness that's bitter and citrusy but also floral and stemmy. Caramel malts, too. Full bodied. A bite of alcohol. One of the more powerful beers I consumed at the festival.
