these guys do a nice job with the saison types and funky stuff, and this is a brett fermented herbal ale, more spring than winter to me, but really nicely done on the fermentation profile, funky and belgiany without being particularly tart or anything, and without the yeasts taking over the beer, there is still a lot going on in it aside from just that. hazy and a little less heady from the tap than a lot of their others were, maybe somewhat less refined, at least visually speaking. the aroma has a juniper note to it, a culinary herb thing too, but i dont know what botanicals are actually used, everything from hops to sage comes to mind here, spruce and citrus notes too, this has to be dry hopped as well, a light tropical thing to it, and all of this is there in the flavor, funked right out by the the brett, which tastes quite mature in here and gives it a real old world vibe on top of the wheaty base. cool beer overall, a neat mix of flavors and pretty evolved really, it could use a little more carbonation and brightness, but the flavors and the fermentation are great!
