Really enjoyed how this tripel captured a cracker and spice savory nature early in the taste, and then finish with some fresh lemon and pear. Each sip was a satisfying journey. Not as sweet as many tripels, but this packs so much flavor you just don't miss the sweetness. Rich and complex!

I was at In de Wildeman in Amsterdam on 02OCT12. Having already had a couple of Tripels, the bartender, Simon, suggested this new, local offering. Let 'er rip, I said! I ended up have 2 servings, 0.25l at €3.80 each.
The bier in my tulip was a solid golden color, about 99% clear; just a hint of haze. Had a thick, billowy, white head, which lasted quite well and produced super lacework. Nose was candi-sweet with some fruit, but not too strong. Had a solid, medium body, and it was low on the prickle factor.
Taste was crackery and a touch bready, with mild sweetness alighting on the palate. Some green fruit - apple, pear, melon - followed up nicely. Had a bit of florality at the finish, but not much. Really, really nice! Prosit!!
