Barrel Aged IPA?? Why not? We had a barrel opening up, so we thought we'd give it a try. We're quite delighted with the result. #15 in our series used New Zealand hops and a light grain bill. Extended aging mellowed the original hop punch and introduced hints of vanilla and coconut from the barrel. After aging, we dry-hopped it to emphasize the citrus and orange marmalade flavors and bring those hop notes back to the forefront.
