The term cuvée is used in both the wine and beer worlds, most often to delineate specially blended batches from the absolute best barrels or tanks the vintner or brewer has to offer. That is certainly the case with our Cuvée; each barrel for this blend was selected from a variety of base beers, barrel types, and fermentation cultures to produce a wild ale that is greater than the sum of its parts. After determining the best blend of barrels, we reserved a portion to condition over hundreds of pounds of whole blackberries and peaches for two months. The final product is complex and robust, the character of the fruit melding beautifully with the funky contributions of several different strains of Brett, bright acidity, oak tannins, and sweetness.

Poured from a 375-ml bottle into a long-stemmed goblet. Pours a beautiful blood-orange color, with not much head to speak of. This was light-bodied as expected. Aromas and flavors of fruit and yeast funk predominate, with lots of lip-smacking tartness. This is a pleasure to drink, with each sip seemingly begging for another. Like a good book, it's hard to put down. Well crafted, not overpoweringly or off-puttingly sour. Those new to the style might find this to be a good entry-level choice.
