Once a year, when the fresh hops are ready for harvest, we brew a “Wet” Hopped IPA. We overnight freshly picked Amarillo from the hop yards in the Pacific Northwest, and within 48 hours these unkilned hops go directly from the bine into our kettles. We keep the malt bill simple to allow that distinctively smooth, fresh hop character to shine through. In fact, most of the fresh hops are saved for the whirlpool, where the Amarillo is encouraged to impart its citrus and floral flavors and aroma to the beer without excess bitterness. It’s brewed fresh to be enjoyed fresh.
