Neither a regulated lager of the Rhineland nor a spontaneously fermented lambic of the Senne River Valley, our American Wild Ale is equal parts planning and abandon. We turbid mashed and fermented Bill with a careful selection of wild yeasts and souring bacteria to give him the flavor profile we were looking for. Fermented and conditioned in our 30 bbl oak Foeder on 2000 lbs of blackberries, then re-fermented in stainless on hundreds of lbs of blueberries and raspberries, this unique beer is bracingly tart, jammy, and bursting with berry flavor that we think you’ll go wild for!

On tap at The Brass Tap, Cedar Falls, IA; served in a small snifter. Appearance is reminiscent of purplish-tinged cognac, with light orangeish-purple highlights. Jammy aromas and flavors of berries, with light wild-ale funk and pleasant but not overbearing tartness. It may have been my imagination, but there seemed to be a hint of salinity as well. The refermentation in stainless seems to have smoothed out the tannins I was expecting. Light, refreshing, and a crisp finish round out the profile. Highly recommended if you're a fan of wild sours.
