Not a controlled and regulated lager of the Rhineland, nor a spontaneously fermented lambic of the Senne River Valley, our American Wild Ale is equal parts planning and abandon. We turbid mashed and fermented Annie with a careful selection of wild yeasts and souring bacteria to give her the flavor profile we were looking for. Fermented and conditioned in our 30 bbl oak Foeder on 2000 lbs of blackberries, the culture mingled with the wild yeast on the blackberry skins to create a one of a kind beer. Bracingly tart, jammy, funky, fruity, oaky, and distinctly American.
