They say good things take time, great things take a little longer. Count us as believers, because at every step we took our time with this beer. A full 24-hour boil preceded weeks of fermentation and maturation before racking this massive stout into bourbon barrels for two years of slumber. Even then we weren’t quite done, another month in maple syrup barrels for finishing before dosing with vanilla and spices. We think the end result is truly great. Intense and complex, but well melded, you’ll get notes of sweet and dark chocolates, burnt sugar and molasses, stone fruits, cherries, and orange, buoyed by creamy vanilla before giving way to warming bourbon heat, cinnamon, cardamom...
