a gorgeous belgian tripel here done with local grain, arguable their most cleaned up and refined beer on tap when we visited, more clear than pretty much all the rest of them, super lively on the carbonation where some of them sagged a little bit, and with a super well hidden alcohol strength. this is pretty true to style, but i like how they have brought in a little local terroir to it, some oats in here too, less common in the style but subtle, more impact on softening the body than on flavor to me. golden and sunny in the glass with some lace as we drink it down, a pretty luster and staying lively the whole time. aroma and flavor of coriander, clover honey, and slightly sharp and assertive belgian yeast. cut grass as it warms, an added simple sugar but its not too sweet overall, barely perceptible alcohol even as it warms, and a faint toasted note. mellow white wine and pear on the swallow but not overly estery, and with a much lighter body than i expected at this strength. nice beer overall, pleasant the whole way, delicate even for what it is. we had an amazing time here, a very unique little brewery in the middle of wine country!
