A tip of our flat-brimmed hat to the forebears of the dank arts! Our most traditional West Coast Style IPA yet- bright, resinous, with a pithy balanced bitterness. Notes of fresh citrus rind, peppery mango, clementine juice, and a long crisp finish, begging for a second pint.

16oz can purchased from the fridge as a single for $5.00. Canned on 04/19/23, so this beer is almost four months old. The beer name is a lyric within the song Can't Stop by Red Hot Chili Peppers.

Look: It's a medium gold color with a tinge of copper. There was a frothy two-finger head that was slightly rocky and dissipated to a creamy, thin layer. Signs of nice lacing. It's basically clear but there are some very small particulates floating around in suspension.

Smell: The aroma is a bit subdued. I get clementine notes including the peel and some slight juicy notes along with piney, resinous notes. Bready, slightly caramel malt in the background.

Taste: This goes down super smooth and easy. Up front, it has that nice clementine flavor along with a sweet caramel malt and toasted grain base. The finish is mildly to moderately bitter with a subtle prickly "tang" on the palate (slightly metallic/slightly acidic) that I'm not sure what it is but I like it. It's impressive how nicely balanced this IPA is. Subtle mango and pepper, spicy notes also linger on the palate.

Feel: The mouthfeel is really nice. It's perfectly carbonated and the carbonation has a nice softness and creaminess to it. There's a nice chewiness on the palate also.

Overall: I would say that it is as-advertised in that it is a traditional West Coast Style IPA. It's kind of interesting because it can easily come off as "tame" compared to so much of what is being brewed today. Kind of reminds me a bit of some of the Maine Beer Company beers in that both have really clean, tasty flavors on the palate. It also bears some similarity to Half Acre Beer Company - Daisy Cutter, Sierra Nevada Brewing Co. - Pale Ale, and Cigar City Brewing - Jai Alai IPA. If this were a blind tasting, I'm honestly not sure if I would call this out as an IPA or a Pale Ale. I would guess that it has a lot of "C" hops. As I said above, it's awesome how balanced this IPA is and it's sad that it's so hard to find an IPA that strives to reach this kind of balance as the trend has been to take everything to the extreme and "double dry hop" everything ad infinitum. Subtlety and restraint are lost arts for sure. This is one of the better SingleCut beers that I have had - they should make more West Coast IPAs!

A very reasonable pour emptied a pint can into a clear glass liter mug. There's no froth, just a modest white head. The body is light amber and it's cloudy. Not particularly aromatic, there's a bit of malt and indistinctive hops for the nose. No reason to get excited. It's quite drinkable, but not outstanding. To taste, there's enough dry hopping to make it a worthwhile consumption. Maybe that aspect is citrus like, but it's more like a champagne, a good champagne, in its taste and finish. It claims to be a West Coast IPA and that is precisely what it is. Decently hoppy, malt sweetness deprived and lightly bodied, this checks off the major boxes for the style. But, it's not dryly hoppy enough to be put among the best. The best of this style almost requires a good piney hop bite at the finish and this lacks that. The mouthfeel is surprisingly light. But, it's not bad for a West Coast IPA brewed on the East Coast.

Not bad, and not the usual quality of IPA from Singlecut. Some mild fruit flavor and hoppy.

West Coast? I don’t think so. The West Coast IPAs had a sharper finish which sometimes overshadowed the taste.

This is a moderately good IPA. Not special-without a strong definition of aroma, taste and finish.
