a really rad new beer from these guys, it seems like the experimentation never stops in here, i love it! this one is done with a ton of oak, in mash and whirlpool and all, as well as in the fermenter. it is perfect for fall, dense and hearty, but still low alcohol and drinkable, dry for the style, and with a lot of added complexity from all the wood, it seems to have more flavor than just about anything else i can recall in this category. a clearish deep amber color and a rising crown of tan head from the tap. aroma of dried fruits, kilned malts, and new oak with its signature sweet vanilla profile and a light tannic thing, maybe some english yeast too, its bready to me, warming even. the flavor is about the same as the nose, seems like some bitterness has been transferred in from the wood too, which balances the finish seemingly in the place of hops, and there is a lot of richness to the beer from the wood as well, even though this isnt woody in a traditional barrel aged sense, its different, cleaner, i love it. good choice for a base beer to showcase the different wood additions too, the malts love it, and the beer is light enough for all the nuance to come through, yet flavorful enough that its not all wood, killer depth of flavor and complexity in a style that usually bores me. smooth and drinkable, dry for what it is, well carbonated, and finishing hearty from the oak. interesting and different, unexpectedly awesome stuff from these guys!
