There was once a time when Simcoe hops were aligned with grassiness, spiciness and a general unpleasant herbal character. But now that all the newer hop varieties have trended juice-box, the Simcoe hop is now a welcomed commodity.
Pale gold and laced with a heavy hop haze, the Simcoe version in Foley Brothers' Captain's Series celebrates their brewing prowess with a sharp citrus perfume that rolls off of a cottony white cap. With a blend of herbal vegetation, peppery spice and grapefruit aromas, a botanical tone is set. Soft and bready in its early taste, there's a light creamy doughiness with hints of honeysuckle and wafer that defines the early malt contributions.
As the malts relax and the hops swell on the middle palate, its the full potential of the classic hop profile to be realized. Overtones of white grapefruit are propped up by more herbal flavors of fresh-cut grass, pine tar and hemp. Yet as the ale trends firmly but spicy and smoothly bitter, the late taste is peppery, grassy and botanical.
Medium-full and trending malty-dry on the finish, the calm bitterness and its gin and hemp flavors aren't enough to shine through the malts. Although its good to visit an old hop friend, its play on a New England-styled IPA is slightly misplaced.

Finished it an hour ago. Couldn't break away from in-laws. Can. Golden with haze (not gross murk) lasting head and lace. LIght fruity grapefruit and light pine aroma. medium light fruity grassy sweetness with medium grapefruit pine bitterness in dry finish. Light soft body TOTALLY FUCKING EXCELLENT.

Super smell, with a taste just as good behind it

Poured into a becher pint glass.
The appearance was a bright glossy pale yellow color with a finger's worth of white foamy head that slid off at a fairly slow pace. Moderate sticky messy lace wound around the glass.
The aroma had a nice lemony to resinous hoppiness up front playing with a sweet clean malt backbone.
The flavor brought the bitterness to the sweetness somewhat stiff but nice. Slight dry sticky sweet resinous aftertaste.
The mouthfeel was about medium bodied, perhaps just a touch under with a fair sessionability about it. Carbonation felt fine. ABV felt on par. Bitter resinous finish.
Overall, pretty nice single hop APA. I'd have again.
