Hiver Sommeil is reflective of all that we owe to the Old World beer styles. This barrel-aged Belgian-style Tripel is brewed with honey and Belgian candy sugar and finished with our house brettanomyces culture. Hiver Sommeil is an offering of gratitude to the rest winter brings. Sleep sweet.

Good Tripel!! Poured from a 500 ml bottle into an Augustijn goblet. Light orange, somewhat hazy color with a bubbly white head with average retention. Light spots of lacing on the sides of the glass. Aroma and flavor feature Belgian yeast and sweetness from honey and candi sugar that take from the usual "apples and pears" fruitiness. The sweet presence is pleasant enough in its own right and adds a floral aspect to the nose. I didn't get much of the "barrel aged" aspect, but the flavors stand up very well. This is easily comparable to Belgian Tripels. Mouthfeel is smooth and sweet. Like most good Tripels, the alcohol presence is undetectable. While missing some aspects of classic Tripels, this is a very good beer and well worth a try. There are enough Tripel factors that this is a good representative of the style. Wicked Weed does Tripels and Saisons very well.
